
Cèrto Risto & Pizza recently opened in the Coral Gables/West Miami area and the locals couldn’t be happier. “Cèrto”, which means truth, is used a lot in Italian as an affirmation, and the truth about Cèrto is that it provides customers with a comfortable and convenient setting to enjoy a variety of authentic Italian dishes. “I wanted a short, positive name that would leave customers with fond memories when they think of their visit to Cèrto,” shares Certo owner Giovanni Astudillo (Gio), who was born in Ecuador and moved to New York City at the time. age of 16. Gio graduated from high school and attended college before deciding to devote his life to the restaurant business. He saved little by little in the hope of one day opening a small restaurant. Gio has gained extensive restaurant experience at Barbetta in New York, Remi, Palio and Becco to name a few.
In Miami, Gio helped open Anacapri over Ponce de Leon and was instrumental in opening Farinelli, where he served as general manager. He then became the General Manager of the two Apizza Brooklyn locations. After years of hard work, Gio’s dream of opening his restaurant came true and Cèrto was born!

Cèrto was recently nominated for “Best New Restaurant in Miami” by the Miami Herald.

Polipo Alla Legna
Octopus roasted in a wood-fired oven with a spicy sweet herb oil served with julienned squash, carrots and zucchini, and a tricolor salad;
Focaccia Coste della Croce
Garnished with braised short ribs, caramelized onions, arugula and fontina cheese;
Fiocchi Alla Gorgonzola
Purse-shaped pasta filled with pear and ricotta, served in a gorgonzola cream sauce;
Ossobuco from Vitello
Veal shank braised in white wine and vegetables, served on a parmesan risotto;
Zabaglione Con Frutti Di Bosco
Light pastry cream made from sweet marsala served in a caramel sugar bowl topped with fresh mixed berries.
This writer had the chance to taste Polipo, Focaccia (both cooked in a wood oven) and Fiocchi Alla Gorgonzola and I would agree with Gio on the exceptional quality of these dishes. The Fiocchi is by far one of the best pastas I have ever tasted this side of Italy!
